Where It All Began

In 1999, Maria and Roberto Garza scraped together their savings, rented a corner space on Blanco Rd in San Antonio's vibrant Southtown neighborhood, and opened the doors to what would become one of the city's most beloved Tex-Mex institutions.

They had no fancy investors, no marketing budget, and no famous chef credentials. What they had was a grandmother's cookbook, two decades of family Sunday cooking, and an unshakeable belief that real Tex-Mex — made with care, quality ingredients, and honest flavors — would always find its audience.

The first week, they served 40 people. By the end of the first month, there was a line out the door. Twenty-five years later, that line still forms on Friday nights, and the red chile sauce recipe — simmered for four hours from dried guajillo and ancho chiles — has never been changed.

What Makes Us Different

San Antonio has no shortage of Mexican food. But Tex-Mex is its own tradition — a beautiful collision of Mexican cooking techniques, Texas beef culture, and borderland creativity that developed over more than a century in South Texas.

At Big Red Enchilada, we honor that tradition by cooking the way our grandmothers cooked: from scratch, every day, with no shortcuts. Our enchiladas are hand-rolled. Our guacamole is made tableside. Our tortillas are pressed from masa we prepare in-house. We don't use pre-mixed spice packets or jarred salsas — every sauce and marinade is made in our kitchen.

We source our beef from Texas ranches, our produce from local farms whenever the season allows, and our chiles from trusted suppliers who share our commitment to quality. We believe the best meal you'll ever have at Big Red Enchilada will be the next one.

Community & Family

Over 25 years, Big Red Enchilada has become a thread woven into San Antonio's social fabric. We've hosted thousands of birthday dinners, anniversary celebrations, quinceañeras after-parties, and post-game team meals. We've fed city council members and construction workers, tourists discovering SA for the first time and families who've eaten here every Sunday for two decades.

We've also tried to give back. Every year, we partner with local schools for fundraiser nights, donate food to community events, and participate in San Antonio's vibrant cultural festivals. Tex-Mex is community food — it's meant to be shared.

Roberto's daughter Elena now manages daily operations, carrying the family legacy into a third generation. She's introduced new dishes like the birria tacos and Gulf shrimp fajitas, while fiercely protecting the classics that made us who we are.
